Welcome to Mapo Tofu
This dish got its name from a small restraunt whose owner is a women with "ma"(freckles) on her face. When people forget her name, they would just call her miss "ma", which is "ma po" in chinese.

One spoonful |
Instructions
- Slice the tofu into cubes.
- Add some salt in a pot filled with water and dump the cubed tofu inside.
- Do not stir around with a spoon, use pushing motions and move the pan around.
- In a pan add some oil and start to saute it.
- Add in some cooking wine, a pinch of salt
- Plate for later use
- In the pan, add some oil, a spoonful of Douban sauce, some dried grounded pepper, sliced spring onions, and finally two cups of water.
- Add in the tofu so the water is just above it
- Now wait about 3-5 minutes for the seasoning to sink in.
- Make sure not to stir the tofu directly but to push around the side of the pan.
- Finally add two spoons of soy sauce and a spoonful of sugar(optional) along with the fired beef.
- Dilute the starch with some water and add in three times while carefully stirring the contents inside.
