This classical ingredient is used in many to season many foods. You can add it to noodles, dumplings, and rice noodles.

Ingredients Amount
Dried pepper Three cups
Salt A spoon
Bing tang Add acording to taste
Oil Add in according to ratio
Parsley and spring onions Add acordding to taste
Anise One tablespoon of spices like: ba jiao, xiang ye, hui xiang.




Instructions

  1. In a pan, add three cups of chopped pepper. Fry till its dry.
  2. In a pan, add oil in a ratio of 5:1, warm the oil till about 240 degrees C or till the oil is almost clear.
  3. Put some sesame seeds into a colender and hang it over the hot oil till some of it starts jumping.
  4. Add in spring onions, ginger, and parsley and fry till it is golden yellow.
  5. After the oil cools down a bit, add in the anise. Fry for one minute and take out of pan.
  6. When the oil cools to about 200 decrees C, add in 1/3 of the dried pepper.
  7. When the oil cools down to about 140 degrees C, add another 1/3 of the dried pepper.
  8. Wait two hours then add in the last 1/3 of the dired pepper.
  9. Now add in the fried sesame.
  10. Chill for 24 hours before stirring.
